About This Dish
A refreshing traditional drink made by blending blanched almonds with water, sugar, and orange blossom water, then straining to produce a silky, fragrant milk. This drink predates the modern commercial almond milks by centuries and has a much richer, more complex flavor thanks to the orange blossom water and real almond flavor. Particularly popular in Fes, where almond orchards surround the city, this drink is served cold in summer and is a traditional Ramadan beverage. It is also the drink of choice at Moroccan weddings, where it is served to arriving guests.
Ingredients
- 200 g Blanched almonds
- 800 ml Water
- 80 g Sugar
- 2 tbsp Orange blossom water
Instructions

Soak almonds in water for at least 4 hours or overnight.

Blend almonds with fresh water until very smooth.

Strain through cheesecloth or fine sieve, squeezing to extract all liquid.

Add sugar and orange blossom water. Stir until dissolved.

Chill thoroughly. Serve cold.
Tips & Tricks
- Longer soaking produces smoother, more flavorful milk.
- Do not discard the almond pulp — it can be used in cookie recipes.
- This keeps in the fridge for 3 days. Shake before serving.
