Dar Roumana, meaning "House of the Pomegranate" in Arabic, is a beautifully restored riad in the heart of the Fes medina that has earned a devoted following among food-loving travelers from around the world. Named after the ancient pomegranate tree that still grows in its courtyard, this six-room guesthouse elevates the Moroccan riad experience through its exceptional culinary program.

The property was lovingly restored by a Canadian-Moroccan couple who brought both international design sensibility and deep respect for traditional Fassi architecture. The result is a harmonious blend of contemporary comfort and centuries-old craftsmanship: smooth tadelakt walls in jewel tones, original hand-carved plaster, and modern bathrooms that incorporate traditional materials.

The cooking classes at Dar Roumana are legendary, led by expert chefs who guide guests through the souks to select ingredients before teaching the secrets of dishes that have been perfected over generations.
