The Chouara Tannery is the oldest and largest of the three traditional leather tanneries in Fes, dating back to the 11th century and operating continuously for over a thousand years. It is one of the most iconic and sensory-overwhelming sights in Morocco, a vast open-air complex of stone vats filled with vivid natural dyes where tanners work waist-deep using techniques virtually unchanged since the medieval era.
The tannery is nestled deep in the heart of the Fes el-Bali medina, and the best views come from the terraces of surrounding leather shops, which offer elevated vantage points looking down into the honeycomb of circular stone vats. From above, the scene is strikingly photogenic: rows of round vats filled with bright white, ochre, red, saffron, indigo, and mint green liquids create an abstract geometric pattern against the ancient stone. Workers in the vats treat the hides with pigeon droppings, quicklime, cow urine, and natural plant dyes including poppy, indigo, henna, and saffron.
