Led by a professional Moroccan chef, you will learn to prepare an authentic multi-course Moroccan meal from scratch, starting with a guided tour of the local souk to select the freshest ingredients and rarest spices.
The experience begins with an immersive walk through the spice souk, where your chef guide explains the uses and origins of the dozens of spices that form the backbone of Moroccan cooking: saffron from Taliouine, ras el hanout blends unique to each spice merchant, preserved lemons, cumin, turmeric, and aromatic herbs. You will select your own ingredients and learn the art of haggling along the way.
Back in the riad kitchen, the cooking begins. You will prepare a traditional Moroccan salad course, a main tagine (choosing from lamb, chicken, or vegetable options), handmade couscous rolled by hand in the traditional manner, and a sweet pastilla or Moroccan pastry for dessert. The chef demonstrates each technique while sharing family recipes passed down through generations, and you practice each step yourself.
The class culminates in a communal meal where you sit down to enjoy the fruits of your labor in the beautiful riad courtyard, accompanied by mint tea prepared the traditional way. You will leave with a recipe booklet and the confidence to recreate these dishes at home.
