Begin in the medina. A suite in a 15th-century riad near Bab Doukkala is a different planet from a chain hotel: star-shaped plaster ceilings, an orange-tree courtyard, and a rooftop with an uninterrupted view of minarets. Book a private half-day medina walk with a guide who actually knows the families behind the doors — skip the scripted route and end up in a weaver's workshop or a saffron merchant's store room. Evenings: dinner at Dar Yacout or a rooftop restaurant in the Mellah where the lamb tagine arrives under a copper dome.
