Starting in Fes and ending in Marrakech works well for two reasons: Fes is quieter and the slower pace helps you settle into Morocco without sensory overload; and the journey south through the gorges and Sahara to Marrakech gives the itinerary a natural build toward a crescendo. December to February is viable — Marrakech and Fes remain mild — but the Sahara nights will be cold (sometimes near freezing) and some mountain roads can close with snow.
