The fried potato ball

Makouda start as mashed potato mixed with garlic, cumin, coriander and sometimes a pinch of harissa, then formed into small balls or patties, dipped in egg batter and deep-fried until the outside shatters and the inside stays creamy. In some cities the batter is plain flour; in others it picks up turmeric for a faint golden glow.
Sellers scoop them into a piece of newspaper or a thin paper bag and hand them over with a squeeze of harissa-spiked tomato sauce. Eat immediately — they lose their crunch fast. Price: roughly 1–3 MAD per ball (indicative).
