About This Dish
Crispy, golden potato fritters that are one of Morocco's most popular street foods. Mashed potatoes are seasoned with cumin, parsley, and garlic, shaped into thick patties, and deep-fried until they have a crunchy golden exterior and a soft, fluffy interior. Maakouda vendors are found at every market and street corner, and the fritters are commonly tucked into sandwiches with harissa and salad for a filling, inexpensive meal. Ingredients
- 500 g Potatoes, boiled and mashed
- 2 Eggs
- 3 tbsp Fresh parsley, chopped
- 2 cloves Garlic, minced
- 1 tsp Ground cumin
- to taste Salt and pepper
- 1/2 cup Flour for coating
- for deep frying Oil for frying
Instructions

Mix mashed potatoes with 1 egg, parsley, garlic, cumin, salt, and pepper.

Shape into thick patties about 7cm wide.

Beat remaining egg. Dip patties in egg, then coat in flour.

Deep fry at 175C (350F) until golden on both sides, about 3-4 minutes.

Drain on paper towels. Serve hot.
Tips & Tricks
- Potatoes should be dry-mashed — too much moisture and they fall apart in the oil.
- Do not make them too thin — a thick patty stays crispy longer.
- Serve in bread with harissa and salad for the authentic street food experience.
