A fragrant herbal infusion made from fresh lemon verbena leaves that is one of Morocco's most cherished digestive and relaxation drinks. Louiza (lemon verbena) grows abundantly in Moroccan gardens and is valued for its calming, sleep-inducing properties. The tea has a beautiful pale gold color and a bright, lemony aroma that is instantly soothing. It is traditionally served after dinner to aid digestion and before bedtime to promote restful sleep. During winter, louiza tea with honey is the go-to remedy for colds and sore throats.
Ingredients
- large handful Fresh lemon verbena leaves
- 500 ml Boiling water
- to taste Honey or sugar
Instructions

Rinse verbena leaves gently.

Place in a teapot. Pour boiling water over.

Steep for 5 minutes.

Sweeten with honey if desired. Serve hot.
Tips & Tricks
- Fresh leaves are far superior to dried for this tea.
- Do not oversteep — verbena can become slightly bitter after 7 minutes.
- Can be combined with mint tea for a mixed herbal blend.
